What better way to start the day than with some good old avo on toast?! This is actually a personal favourite lunch option of mine, although it too makes a very good breakfast. Simple yet satisfying , the appeal of avo on toast, for me, is how quickly I can throw it together if I’m short of time. This balanced meal provides good fats (avo), carbs (bread) and protein (feta, or try it with smoked salmon!) to keep you going on a busy day. Personally, I have not long been a fan of avocado, but the combo of avo and tomatoes with the topped feta, I have to admit, got me hooked. So I do recommend giving this one a go, even if you think you’re not a big avo fan!
